Spicy Honey Roasted Cashews: Great Travel Snack

Making them at home isn’t difficult, and you’ll be amazed how close they’ll taste to the more expensive counterpart. The best thing is that they’re the perfect snack on the go, so pack some on your next road trip!

Spicy Honey Roasted Cashews

1 Tbls peanut oil (or sesame oil)
2 Tbls honey
1 Tbls lemon or lime juice
1 Tbls curry powder
1 teaspoon chili powder
1/2 teaspoon sea salt

1 1/2 cups cashews or almonds

Directions:

Heat the oven to 300°F. Combine all first 6 ingredients in a small pan. Stir and heat on low until everything is well combined. Pour sauce over nuts and mix well. Layout on a cookie sheet either sprayed with spray-oil or lined with parchment paper. Roast for 20 to 30 minutes.

Place the pistachios in a bowl and pour the hot curry seasoning over nuts. Toss with a spatula or spoon until the nuts are fully coated. Spread the seasoned nuts onto a parchment-lined baking tray. Roast the nuts for about 25 minutes, stirring once at halfway mark, until the coating looks baked on and dry. Allow to cool, then break cashews apart and store in a zip-lock bag or individual containers for your next road trip.

 

Perfect Travel Snack: Homemade Cinnamon Roasted Almonds

“Chestnuts roasting on an open fire. Jackfrost nipping at your nose”. But, almonds are just as good!

Are you a fan of cinnamon roasted almonds? They are a simple travel snack that is easy to eat, but doesn’t make a mess in the vehicle.

However, you don’t have to hunt down a gift shop to buy them. Why not make them at home for a fraction of the cost. When you make homemade cinnamon roasted almonds, you control the ingredients and flavor as well as the cost! Don’t forget to divide them up into small containers so each person can have their own in the car, and avoid losing them all to the dirty carpet if you hit a bump!

Recipe: Homemade Cinnamon Roasted Almonds

3 Cups Salted Whole Almonds
2 Tbls Vegetable Oil
3 Tbls Sugar
1 tsp Cinnamon

Directions: Heat oil in large fry pan, then add almonds. Toast for a couple minutes stirring constantly. Slowly and evenly shake sugar over almonds, then cinnamon. Keep stirring until sugar melts and adheres to the almonds; about 1 minute. (Note: there may be extra sugar in the pan, and that’s ok) Lay almonds in a single layer on parchment paper to cool.  Enjoy!

Hot Buffalo Turkey Dip

2 Cups Chopped Turkey
8 oz Cream Cheese
1/2 Cup Chopped Celery
1/2 Cup Sharp Cheddar Cheese
1/4 Cup Ranch Salad Dressing
1 Cup Buffalo Sauce (I like Franks)

Directions: Mix ingredients together and put into baking dish. Heat at 350 for about 40 minutes or until bubbly. Serve with crackers, chips, or celery sticks.

Hot Turkey Crockpot Sandwiches

4-6 Cups Shredded Turkey
1 Can Cream of Soup (Mushroom, Chicken or Celery)
8 oz Sour Cream
8 oz Velvetta Cheese, cubed
1/2 of Milk or Chicken Broth

Directions: Combine all ingredients in the crockpot and set to warm or low. All ingredients are cooked, so you only need to heat and blend the flavors. Add more milk/broth if it it doesn’t seem moist enough. Serve on leftover dinner rolls, buns, or bread.
